Ingredients

  • 2 medium fresh beetroot
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 cup unsalted butter
  • 0.5 cup low-fat milk
  • 3 tablespoons honey
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.

Wash and peel the beetroots. Grate them using a box grater or a food processor with a grating attachment and set aside.

In a medium bowl, sift together the whole wheat flour and baking powder. Stir in the ground cinnamon.

In a separate large bowl, beat the unsalted butter and honey until creamy and smooth.

Add in the egg and vanilla extract to the butter mixture, and beat until combined.
