Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
Wash and peel the beetroots. Grate them using a box grater or a food processor with a grating attachment and set aside.
In a medium bowl, sift together the whole wheat flour and baking powder. Stir in the ground cinnamon.
In a separate large bowl, beat the unsalted butter and honey until creamy and smooth.
Add in the egg and vanilla extract to the butter mixture, and beat until combined.
Fold in the grated beetroot and lemon zest gently until evenly distributed.
Alternately add the flour mixture and low-fat milk into the beetroot mixture, beginning and ending with the flour. Mix until just combined.
Pour the batter into the prepared baking pan, smoothing the top with a spatula.
Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and let cool in the pan for 10 minutes. Then transfer the slice to a wire rack to cool completely.
