Ingredients

  • 500 grams fresh beetroot
  • 1 large red onion
  • 100 ml apple cider vinegar
  • 50 grams honey
  • 1 tablespoon fresh ginger
  • 1 teaspoon coriander seeds
  • 0.5 teaspoon black pepper
  • 1 piece bay leaf
  • 100 ml water

Directions

Step 1

Wash and peel the beetroot. Grate it coarsely using a box grater or food processor and set aside.

Step 2

Finely chop the red onion.

Step 3

Peel the fresh ginger and grate it finely to yield one tablespoon.

Step 4

In a large saucepan, combine apple cider vinegar, honey, grated ginger, coriander seeds, black pepper, bay leaf, and water.

Step 5

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally to dissolve the honey.

Step 6

Add the grated beetroot and chopped onion to the saucepan, stirring to mix thoroughly with the simmering liquid.

Step 7

Reduce the heat to low and cover the saucepan with a lid. Allow the mixture to cook gently for about 30-40 minutes, stirring occasionally to ensure the relish doesn't stick to the bottom.

Step 8

Check the beetroot for softness. It should be tender but still retain a little bite.

Step 9

Remove the bay leaf and allow the relish to cool slightly.

Step 10

Transfer the warm relish to sterilized jars, seal tightly, and let cool completely before refrigerating.

Step 11

Allow flavors to develop overnight in the refrigerator. Serve the relish as a condiment with sandwiches, salads, or as a delicate topping for grilled meats.
