Ingredients

  • 500 grams lean beef sirloin
  • 200 grams plain Greek yogurt
  • 2 tablespoons lemon juice
  • 3 cloves garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 red onion
  • 1 cucumber
  • 4 whole wheat flatbreads
  • 1 handful fresh parsley
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 fresh tomatoes

Directions

Step 1

1. Slice the beef sirloin into thin strips and place in a mixing bowl.

Step 2

2. Mince the garlic cloves and add them to the bowl with the beef.

Step 3

3. Add 1 tablespoon of lemon juice, dried oregano, ground black pepper, and ground cumin to the beef. Mix well to ensure all pieces are well coated.

Step 4

4. Cover the bowl with plastic wrap and let the beef marinate in the refrigerator for at least 20 minutes.

Step 5

5. Meanwhile, prepare the tzatziki by mixing the Greek yogurt with the remaining lemon juice in a small bowl. Grate the cucumber and squeeze out excess moisture using a paper towel, then add it to the yogurt mixture. Stir well and set aside.

Step 6

6. Thinly slice the red onion, tomatoes, and chop the fresh parsley. Set them aside for assembling the yiros.

Step 7

7. Heat a tablespoon of olive oil in a heavy-based pan over medium-high heat. Add the marinated beef strips and cook for 5-7 minutes until browned and cooked through.

Step 8

8. Warm the whole wheat flatbreads in a dry skillet or in an oven for a few minutes until pliable.

Step 9

9. Assemble the yiros by spreading a layer of tzatziki on each flatbread. Top with the cooked beef, sliced red onion, tomato, and parsley.

Step 10

10. Optionally, drizzle a bit of extra virgin olive oil and red wine vinegar over the assembled yiros for additional flavor.

Step 11

11. Roll up the flatbreads around the filling and serve immediately.
