Ingredients

  • 500 grams lean ground beef
  • 1 medium, finely chopped onion
  • 2 minced garlic cloves
  • 1 small, grated carrot
  • 60 ml low-sodium beef stock
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon ground black pepper
  • 50 grams oats
  • 1 egg
  • 1 beaten for egg wash egg
  • 375 grams, thawed frozen puff pastry
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and cook until translucent, about 3-4 minutes.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the grated carrot to the skillet and cook for 2-3 minutes until softened.

Step 5

Increase the heat to high and add the lean ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and cooked through.

Step 6

Add low-sodium beef stock, fresh thyme leaves, and ground black pepper to the skillet. Stir well and let it simmer for 5 minutes until most of the liquid has evaporated. Remove from heat and allow to cool slightly.

Step 7

Combine the oats and one egg in a large mixing bowl. Add the beef mixture and mix until well combined.

Step 8

Roll out the thawed puff pastry on a lightly floured surface. Cut it into two rectangular pieces.

Step 9

Divide the beef mixture into two portions and spoon along one edge of each pastry rectangle.

Step 10

Brush the edge of the pastry with the beaten egg, then roll the pastry over the filling to enclose it. Ensure the seam is underneath.

Step 11

Cut each roll into equal portions, approximately 4-5 slices per roll, and place on the prepared baking sheet.

Step 12

Brush the tops of the sausage rolls with the beaten egg wash.

Step 13

Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the puff pastry is golden brown and puffed.

Step 14

Remove from the oven and allow to cool slightly before serving. Enjoy your delicious low sodium beef sausage rolls!
