Ingredients

  • 250 grams Lean beef sirloin, thinly sliced
  • 60 ml Water
  • 2 tablespoons Low sodium soy sauce
  • 1 teaspoon Fresh ginger, minced
  • 2 cloves Garlic, minced
  • 12 Rice paper wrappers
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, julienned
  • 1 medium Red bell pepper, julienned
  • 15 grams Fresh mint leaves
  • 15 grams Fresh cilantro leaves
  • 200 grams Cooked jasmine rice
  • 1 Lime, cut into wedges

Directions

Step 1

In a small bowl, combine lean beef slices with water, low sodium soy sauce, minced ginger, and minced garlic. Let marinate for at least 15 minutes.

Step 2

Heat a non-stick skillet over medium heat. Add the marinated beef and stir-fry for about 5 minutes or until cooked through. Remove from heat and let it cool.

Step 3

Prepare the julienned carrot, cucumber, and red bell pepper. Set them aside.

Step 4

In a large shallow dish, add warm water. Dip one rice paper wrapper in the water for about 5 seconds or until it starts to soften. Remove it before it becomes too soft and place it on a clean, dry surface.

Step 5

Place a small amount of cooked jasmine rice in the center of the rice paper. Top with a few strips of beef, a sprinkle of carrot, cucumber, and red bell pepper.

Add some fresh mint leaves and cilantro leaves on top of the vegetables.

Fold the bottom of the rice paper over the filling, then fold in the sides, and gently roll up to enclose the filling. Repeat with the remaining ingredients.
