Ingredients

  • 1 pound Lean ground beef
  • 0.5 cup Unsalted beef broth
  • 1 cup Bell peppers, diced
  • 0.5 cup Onion, finely chopped
  • 1 cup No-salt-added diced tomatoes
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Black pepper
  • 4 pieces Whole wheat tortillas
  • 1 cup Low sodium cheese, shredded
  • 2 tablespoons Olive oil

Directions

Step 1

In a large skillet over medium heat, add the lean ground beef. Cook until browned and crumbled, about 5-7 minutes, draining any excess fat.

Step 2

Add the diced bell peppers and onion to the skillet with the beef. Sauté until the vegetables are tender, about 4-5 minutes.

Step 3

Stir in the unsalted beef broth, no-salt-added diced tomatoes, ground cumin, chili powder, garlic powder, and black pepper. Bring the mixture to a simmer and cook for an additional 5 minutes, allowing the flavors to meld together. Remove from heat.

Step 4

In a clean skillet, add a small amount of olive oil and heat over medium heat. Place a tortilla in the skillet and sprinkle a quarter of the low sodium cheese over half of the tortilla.

Step 5

Top the cheese with a quarter of the beef mixture, then fold the tortilla over to close. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Step 6

Repeat the process with the remaining tortillas and beef mixture, adding more olive oil to the skillet as needed.

Step 7

Cut each quesadilla into wedges and serve immediately, enjoying this flavorful low sodium delight!
