Ingredients

  • 1 pound beef flank steak
  • 2 cups fresh spinach leaves
  • 1 medium red bell pepper, cut into thin strips
  • 1 cup low-sodium Mozzarella cheese, shredded
  • 3 units garlic cloves, minced
  • 0.25 cup fresh basil leaves, chopped
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Begin by placing the beef flank steak on a cutting board. Use a sharp knife to slice the steak horizontally into a flat, even piece about 1/4 inch thick by butterflying it carefully.

Step 2

Cover the steak with plastic wrap and gently pound it with a meat mallet to an even thickness, being careful not to tear the meat.

Step 3

In a small bowl, mix together the olive oil, balsamic vinegar, lemon juice, minced garlic, and black pepper. Brush this mixture evenly over the surface of the steak.

Step 4

Layer the fresh spinach leaves evenly over the steak, followed by strips of red bell pepper, shredded mozzarella cheese, and chopped basil leaves.

Step 5

Starting from the short side, carefully roll the steak up tightly, securing with toothpicks or kitchen twine at 1-inch intervals.

Step 6

Preheat your oven to 375°F (190°C).

Step 7

Heat a large oven-safe skillet over medium-high heat and add a small amount of olive oil. Sear the beef roll on all sides until browned, about 3-4 minutes per side.

Step 8

Transfer the skillet to the preheated oven and roast for about 15-20 minutes, or until the beef is cooked to your liking.

Step 9

Once cooked, remove from the oven and let rest for 5 minutes. Slice the rolled beef into pinwheels and serve garnished with fresh parsley.
