Ingredients

  • 1 lb Ground beef (preferably lean, 90% lean or higher)
  • 1 tbsp Olive oil
  • 1 Onion, finely chopped
  • 2 Garlic cloves, minced
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1.5 tsp Chili powder
  • 0.5 tsp Black pepper
  • 0.5 tsp Dried oregano
  • 0.5 cup Water
  • 2 tbsp Tomato paste, no added salt
  • 8 Hard taco shells
  • 2 cups Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded low-fat cheese
  • 0.25 cup Fresh cilantro, chopped
  • 1 Avocado, sliced
  • 1 Lime wedges

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add finely chopped onion and cook for 3-4 minutes, until translucent.

Step 3

Stir in minced garlic and cook for an additional minute, until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook, breaking the beef into small pieces with a spatula, until browned and fully cooked through, about 5-6 minutes.

Step 5

Drain excess fat if needed, then reduce the heat to medium.

Step 6

Add ground cumin, paprika, chili powder, black pepper, and dried oregano to the beef. Stir well to coat the beef in the spices.

Step 7

Mix in the tomato paste and water, ensuring all ingredients are well combined. Allow the mixture to simmer for 5-7 minutes, until the liquid is mostly reduced and a thick sauce forms around the beef.

Step 8

Warm the hard taco shells according to package instructions.

Step 9

To assemble the tacos, fill each shell with a portion of the beef mixture.

Step 10

Top with shredded lettuce, diced tomatoes, shredded cheese, fresh cilantro, and sliced avocado as desired.

Step 11

Serve with lime wedges for an extra burst of flavor. Enjoy your homemade low-sodium beef tacos!
