Ingredients

  • 1 pound Flank steak
  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 large Red bell pepper, thinly sliced
  • 1 large Green bell pepper, thinly sliced
  • 1 medium Yellow onion, thinly sliced
  • 12 small Corn tortillas
  • 0.25 cup Fresh cilantro, chopped
  • 1 large Avocado, sliced
  • 4 Lime wedges

Directions

Step 1

In a large mixing bowl, whisk together olive oil, lime juice, ground cumin, black pepper, garlic powder, and chili powder to create the marinade.

Step 2

Place the flank steak in a shallow dish and pour the marinade over it, turning to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

Step 3

Heat a large skillet or grill pan over medium-high heat. Add the marinated steak and cook for 4-5 minutes per side for medium-rare, or adjust the cooking time to your preference.

Step 4

Remove the steak from the heat and let it rest on a cutting board for 5 minutes before slicing thinly against the grain.

Step 5

In the same skillet, add the sliced bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are tender-crisp.

Step 6

While vegetables are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

Step 7

Assemble the tacos by placing slices of steak on each tortilla, topped with sautéed peppers and onions.

Step 8

Garnish each taco with sliced avocado, fresh cilantro, and a squeeze of lime juice.

Step 9

Serve warm and enjoy!
