  • 2 tablespoons Olive oil
  • 1 large White onion, chopped
  • 5 cloves Garlic cloves, minced
  • 0.25 cup Apple cider vinegar
  • 0.25 cup Fresh lime juice
  • 3 peppers Chipotle peppers in adobo sauce, sodium-free or low sodium
  • 1 cup Low sodium beef broth
  • 2 leaves Bay leaves
  • 1 tablespoon Ground cumin
  • 1 tablespoon Dried oregano
  • 1 teaspoon Ground black pepper

Directions

Step 1

Begin by seasoning the beef chuck roast evenly with ground black pepper on all sides.

Step 2

In a large skillet, heat olive oil over medium-high heat. Add the beef and sear on each side until browned, about 3-4 minutes per side. Transfer the beef to a slow cooker.
