Ingredients

  • 0.5 pound beef sirloin, thinly sliced
  • 3 cups broccoli florets
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon cornstarch
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 0.5 cup low-sodium chicken broth
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 medium red bell pepper, sliced
  • 2 stalks green onion, sliced
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium bowl, combine the beef slices with 1 tablespoon of low-sodium soy sauce and 1 tablespoon of cornstarch. Mix well until the beef is coated and set aside to marinate for 10 minutes.

Step 2

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the marinated beef slices and stir-fry for about 3-4 minutes, or until the beef is browned and nearly cooked through. Remove the beef from the skillet and set it aside on a plate.

Step 3

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Once hot, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant.

Step 4

Add the broccoli florets and sliced red bell pepper to the skillet. Continue to stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

Step 5

Return the cooked beef to the skillet with the vegetables. Mix in the remaining 1 tablespoon of low-sodium soy sauce and the low-sodium chicken broth.

Step 6

Drizzle the sesame oil over the stir-fry and season with black pepper. Stir everything together and allow it to cook for another 1-2 minutes, letting the flavors combine and the sauce thicken slightly.

Step 7

Garnish with sliced green onions and serve the stir-fry warm over steamed brown rice or your preferred grain.
