Ingredients

  • 500 grams beef chuck
  • 3 pieces beetroots, medium-sized, peeled and diced
  • 2 pieces carrots, peeled and chopped
  • 2 stalks celery stalks, chopped
  • 1 piece onion, chopped
  • 3 cloves garlic cloves, minced
  • 1 liter low sodium beef broth
  • 500 milliliters water
  • 2 tablespoons olive oil
  • 1 piece bay leaf
  • 3 sprigs fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the beef chuck cubes to the pot and sear them until browned on all sides. This should take about 5-7 minutes. Remove and set aside.

Step 3

In the same pot, add the onions and garlic, sauté for about 3 minutes until the onions become translucent.

Step 4

Add the chopped carrots and celery to the pot, cook for another 5 minutes, stirring occasionally.

Return the beef to the pot along with the diced beetroots.

Pour in the low sodium beef broth and water, making sure the ingredients are submerged. Bring the mixture to a boil.

Once boiling, reduce the heat to low, add the bay leaf and thyme sprigs, then cover the pot and let it simmer for about 60 minutes or until the beef is tender and the beets are soft.
