Ingredients

  • 1 cup Dried cannellini beans
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 Garlic cloves, minced
  • 15 ounces Canned no-salt-added crushed tomatoes
  • 2 tablespoons Tomato paste
  • 2 cups Water
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 1 Bay leaf

Directions

Step 1

Rinse the dried cannellini beans and place them in a large bowl. Cover with water and soak overnight, or for at least 8 hours. Drain and rinse well before using.

Step 2

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic and cook for another 1 minute until fragrant.

Stir in the crushed tomatoes, tomato paste, water, oregano, basil, ground black pepper, red pepper flakes (if using), and bay leaf.

Add the soaked and drained beans to the pot. Stir to combine.
