Ingredients

  • 1 large ripe banana
  • 1 cup unsweetened almond milk
  • 1 large egg
  • 1 scoop vanilla protein powder
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 as needed non-stick cooking spray

Directions

Step 1

Preheat your waffle iron according to the manufacturer's instructions.

Step 2

In a large mixing bowl, mash the ripe banana with a fork until smooth.

Step 3

Add the unsweetened almond milk, egg, vanilla protein powder, and vanilla extract to the mashed banana. Whisk together until well combined.

Step 4

In another bowl, whisk together the whole wheat flour, baking powder, and ground cinnamon.

Step 5

Melt the unsalted butter in the microwave or on the stovetop. Allow it to cool slightly before adding it to the banana mixture along with the honey. Stir until thoroughly mixed.

Step 6

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix the batter.

Step 7

Lightly coat the waffle iron with non-stick cooking spray.

Step 8

Pour a portion of the batter onto the preheated waffle iron, enough to cover the surface but not overflow. Close the lid and cook according to the waffle iron's instructions until the waffle is golden brown and crispy.

Step 9

Carefully remove the waffle and repeat the process with the remaining batter.

Step 10

Serve warm with your choice of toppings such as fresh fruit, a dollop of Greek yogurt, or a drizzle of honey.
