Ingredients

  • 4 cups (canned, drained and rinsed) low sodium navy beans
  • 4 slices low sodium bacon
  • 1 medium, diced onion
  • 2 cloves, minced garlic
  • 1 tablespoon no salt added tomato paste
  • 3 tablespoons dark brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon ground mustard
  • 0.5 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

In a large oven-safe skillet or Dutch oven over medium heat, cook the bacon until crispy, about 7-10 minutes. Remove the bacon and place on a paper towel-lined plate to drain, then crumble into small pieces once cool enough to handle.

Step 3

In the same skillet with the bacon drippings, add the diced onion. Sauté until the onion becomes translucent, about 5 minutes.

Step 4

Add the minced garlic, and sauté for another minute until fragrant.

Step 5

Stir in the no salt added tomato paste, and cook for another 2 minutes, ensuring it mixes well with the onions and garlic.

Step 6

Add the drained and rinsed navy beans to the skillet, mixing well with the onion mixture.

Step 7

In a small bowl, combine the dark brown sugar, apple cider vinegar, Worcestershire sauce, paprika, ground mustard, black pepper, and water. Stir until the sugar is dissolved.

Step 8

Pour the liquid mixture over the beans, stirring to ensure all the ingredients are well combined.

Step 9

Bring the mixture to a gentle simmer on the stove, then remove from heat.

Step 10

Cover the skillet or Dutch oven with a lid or aluminum foil and transfer it to the preheated oven.

Step 11

Bake in the oven for 1 hour, stirring every 20 minutes to prevent sticking and ensure even cooking.

Step 12

After 1 hour, remove the lid or foil, and increase the oven temperature to 350°F (177°C). Continue baking for another 15-20 minutes to thicken the sauce.

Step 13

Remove the baked beans from the oven and stir in the crumbled bacon pieces.

Step 14

Allow to cool for a few minutes before serving. Enjoy your low sodium baked beans with bacon!
