Ingredients

  • 1 pound dried navy beans
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 3 tablespoons tomato paste
  • 14.5 ounces canned no salt added diced tomatoes
  • 1.5 cups unsweetened apple juice
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons molasses
  • 1 teaspoon dry mustard
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 4 cups water
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the navy beans thoroughly under cold water. Place them in a large pot with 4 cups of water. Bring to a boil, then remove from heat and let soak for 1 hour.

Step 2

Drain and rinse the beans after soaking. Set them aside.

Step 3

Preheat your oven to 300°F (150°C).

Step 4

In a large Dutch oven or oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.

Step 5

Add the tomato paste to the pot and cook for 2 minutes, stirring constantly to enhance its flavor.

Step 6

Stir in the diced tomatoes, apple juice, apple cider vinegar, molasses, dry mustard, smoked paprika, and black pepper. Mix well.

Step 7

Add the soaked and drained beans to the pot. Stir to combine all ingredients thoroughly.

Step 8

Bring the mixture to a simmer, then cover the pot with a lid.

Step 9

Transfer the pot to the preheated oven and bake for approximately 2.5 to 3 hours, or until the beans are tender and the sauce has thickened.

Step 10

Check the beans occasionally and add a little water if the mixture becomes too thick.

Step 11

Once done, remove from the oven and let it cool slightly before serving.

Step 12

Serve as a side dish or as a hearty main course alongside cornbread or steamed vegetables.
