  • 4 large eggs

  • 2 large whole wheat tortillas
  • 0.5 cup sharp cheddar cheese, low sodium
  • 1 cup baby spinach
  • 1 medium tomato
  • 1 tablespoon olive oil

Directions

Step 1

Start by preparing the bacon. Heat a non-stick pan over medium heat and cook the low sodium bacon slices until crispy, about 7-10 minutes. Transfer them to a paper towel-lined plate to drain excess oil.

Meanwhile, crack the eggs into a bowl and add milk, black pepper, and onion powder. Whisk until well combined.
