Ingredients

  • 4 slices low sodium bacon
  • 6 large eggs
  • 0.25 cup non-fat Greek yogurt
  • 0.5 cup shredded cheddar cheese
  • 1 cup baby spinach
  • 0.5 cup cherry tomatoes
  • 0.25 teaspoon ground black pepper
  • 1 as needed olive oil spray

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Spray a 12-cavity muffin pan with olive oil spray to prevent sticking.

Step 3

Cut the low sodium bacon into small bite-sized pieces and cook them in a non-stick skillet over medium heat until browned slightly. Remove the bacon and drain it on a paper towel.
