Ingredients

  • 2 slices Low sodium turkey bacon
  • 1 Large egg
  • 1 slice Low sodium cheddar cheese
  • 1 Whole wheat English muffin
  • 1 teaspoon Unsalted butter
  • 0.25 teaspoon Black pepper
  • 6 leaves Fresh spinach leaves

Directions

Step 1

Preheat a non-stick skillet over medium heat. Add the 2 slices of low sodium turkey bacon to the skillet and cook for 3-4 minutes on each side, or until crispy. Remove from the skillet and set aside on a paper towel to drain any excess fat.

Step 2

While the bacon is cooking, slice the whole wheat English muffin in half and toast it until golden brown using a toaster or oven.

In the same skillet used for the bacon, add 1 teaspoon of unsalted butter and let it melt. Crack the large egg into the skillet and season with 0.25 teaspoon of black pepper.
