Ingredients

  • 6 large eggs
  • 4 large egg whites
  • 4 slices unsalted bacon
  • 1 cup gruyere cheese
  • 1 cup low sodium cottage cheese
  • 0.25 cup milk
  • 0.25 cup green onions, finely chopped
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon garlic powder
  • 1 as needed olive oil spray

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Lightly spray a 12-cup muffin tin with olive oil spray.

Step 3

In a frying pan over medium heat, cook the unsalted bacon slices until crispy. Remove from the pan and let them cool on a paper towel, then chop into small pieces.

Step 4

In a blender, combine eggs, egg whites, low sodium cottage cheese, milk, black pepper, and garlic powder. Blend on high until the mixture is smooth and frothy.

Step 5

Pour the egg mixture into a large mixing bowl. Stir in the chopped bacon, gruyere cheese, and green onions.

Step 6

Carefully pour the mixture evenly into the prepared muffin cups, filling about three-quarters full.

Step 7

Place the muffin tin on the middle rack of the oven and bake for 25-30 minutes, or until the egg bites are set and lightly golden on top.

Step 8

Remove the muffin tin from the oven and let the egg bites cool in the tin for 5 minutes before gently removing them using a spoon or spatula.

Step 9

Serve immediately or allow to cool completely and store in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for about 30 seconds before serving.
