Ingredients

  • 4 slices Low sodium bacon
  • 2 large Eggs
  • 2 Whole wheat roll
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Low-sodium cream cheese
  • 1 cup Fresh spinach
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat a medium non-stick skillet over medium heat. Add 1 tablespoon of olive oil.

Step 2

Add the low sodium bacon slices to the skillet and cook until they are crispy, about 5 minutes, turning halfway through. Once cooked, remove the bacon and set it aside on paper towels to drain excess fat.

While the bacon is cooking, cut each whole wheat roll in half horizontally. Spread each half with 1/2 tablespoon of unsalted butter.

In the same skillet used for the bacon, add the spinach and sauté for about 2 minutes until wilted. Remove the spinach and set aside.
