Ingredients

  • 12 slices low sodium bacon
  • 12 pieces asparagus spears
  • 12 pieces carrot sticks
  • 1 large red bell pepper
  • 1 medium zucchini
  • 2 tablespoons olive oil
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or use a non-stick baking sheet.

Step 2

Wash and prepare the vegetables: Peel and cut the carrot into 12 sticks, each about the length of a bacon slice. Slice the red bell pepper and zucchini into strips similar in size to the carrots. Trim the asparagus spears to remove any woody ends.

Step 3

In a large bowl, toss all the prepared vegetables with olive oil, ground black pepper, garlic powder, and paprika until evenly coated.
