Ingredients

  • 2 pieces Low-sodium English muffin
  • 1 tablespoon Unsalted butter
  • 4 slices Low-sodium bacon
  • 2 large Eggs
  • 2 slices Low-sodium cheddar cheese
  • 0.5 teaspoon Freshly ground black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C) to keep ingredients warm as needed.

Step 2

Heat a non-stick skillet over medium heat. Add the low-sodium bacon slices to the pan and cook until crispy, about 4-5 minutes per side. Once cooked, place the bacon on a paper towel-lined plate to drain excess fat.

Step 3

While the bacon is cooking, split the English muffins in half and lightly butter each half with unsalted butter. Toast them in a toaster or under a broiler until golden brown.

Step 4

In a small bowl, crack the eggs and whisk gently. Add the freshly ground black pepper and mix well.

Step 5

Add the teaspoon of olive oil to a clean non-stick skillet over medium heat. Pour in the whisked eggs and cook slowly, stirring occasionally, until just set and fluffy, about 3-4 minutes.

Step 6

Place a slice of low-sodium cheddar cheese on the bottom half of each toasted English muffin.

Step 7

Once the eggs are cooked, divide them equally between the two muffins, placing them on top of the cheese.

Step 8

Cut each bacon slice in half and place four halves on top of the eggs on each muffin.

Step 9

Complete each sandwich by topping with the other half of the muffin.

Step 10

Optionally, place the assembled sandwiches in the preheated oven for 3-5 minutes to melt the cheese further and warm the entire sandwich.

Step 11

Serve immediately and enjoy your delicious, low-sodium breakfast!
