  • 2 medium eggplants
  • 0.25 cup tahini
  • 2 tablespoons lemon juice

  • 2 tablespoons fresh parsley
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper for easy clean-up.

Wash and dry the eggplants and prick them several times with a fork to allow steam to escape.
