  • 2 teaspoons Turmeric powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 inch piece, grated Fresh ginger
  • 4 minced Garlic cloves
  • 3 sliced thinly Shallots
  • 15 leaves Curry leaves
  • 0.25 cup Coconut milk
  • 1 teaspoon White pepper
  • 2 tablespoons Low sodium soy sauce
  • 0.5 cup Rice flour
  • 0.25 cup Cornstarch
  • 2 cups Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine turmeric powder, coriander powder, cumin powder, grated ginger, minced garlic, sliced shallots, curry leaves, coconut milk, white pepper, and low sodium soy sauce.

Step 2

Add the chicken pieces to the bowl and mix thoroughly to ensure they are well-coated with the marinade. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight for more flavor.

Step 3

In a shallow dish, combine rice flour and cornstarch.

Step 4

Heat vegetable oil in a deep frying pan or wok over medium-high heat.

Step 5

Remove the chicken from the marinade, allowing any excess to drip off, and then coat the chicken pieces in the flour-cornstarch mixture.

Step 6

Fry the chicken in batches in the hot oil for about 10-15 minutes or until golden brown and fully cooked through, turning occasionally to ensure even cooking. Adjust the heat as necessary to avoid burning.

Step 7

Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil.

Step 8

Serve hot with a side of steamed vegetables or a simple salad for a complete meal.
