Ingredients

  • 500 grams Lean ground beef
  • 1 medium, finely chopped Onion
  • 2 minced Garlic cloves
  • 1 cup Low-sodium beef stock
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 2 tablespoons Cornstarch
  • 1 tablespoon Water
  • 2 sheets Low sodium puff pastry
  • 1 large, beaten Egg
  • 0 to taste Black pepper

Directions

Step 1

Preheat oven to 200 C (390 F) and lightly grease a muffin tin with nonstick spray.

Step 2

In a large skillet over medium heat, cook the onion and garlic until softened, about 3-4 minutes.

Step 3

Add the lean ground beef to the skillet and cook until browned, breaking up any lumps with a spoon.

Step 4

Stir in the low-sodium beef stock, Worcestershire sauce, tomato paste, and dried thyme. Season with black pepper to taste.

Step 5

Simmer the mixture for 10 minutes until it thickens slightly, stirring occasionally.

Step 6

Mix cornstarch with 1 tablespoon of water to form a slurry, and add it to the beef mixture. Stir until the sauce thickens.

Step 7

Remove the skillet from heat and allow the mixture to cool slightly.

Step 8

Roll out the low sodium puff pastry sheets on a lightly floured surface. Cut them into circles large enough to line the muffin tin cups, with some overhang.

Step 9

Spoon the beef mixture into each pastry-lined cup, filling them to the top.

Step 10

Cut smaller circles from the remaining pastry to form the tops of the pies and place them over the filling, sealing the edges by pressing them with a fork.

Step 11

Brush the tops of the pies with beaten egg to create a golden finish.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.

Step 13

Allow the pies to cool slightly in the tin before carefully removing them. Serve warm.
