Ingredients

  • 2 large Aubergines (eggplants)
  • 2 large Garlic cloves
  • 60 ml Tahini
  • 60 ml Lemon juice
  • 30 ml Extra virgin olive oil
  • 60 ml Plain yogurt (unsweetened)
  • 1 teaspoon Ground cumin
  • 2 tablespoons Fresh parsley leaves (optional, for garnish)
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Preheat the oven to 220°C (430°F). Line a baking tray with parchment paper.

Step 2

Prick the aubergines all over with a fork to allow steam to escape during cooking.

Step 3

Place the aubergines on the prepared baking tray and roast in the preheated oven for 30-40 minutes, or until the skin is charred and the flesh is tender.

Step 4

While the aubergines are cooling, peel and mince the garlic cloves.

Once the aubergines are cool enough to handle, cut them open and scoop out the flesh, discarding the skin.
