Ingredients

  • 1 cup Short grain white rice
  • 2 cups Water
  • 4 cups Whole milk
  • 1 cup Low sodium almond milk
  • 1 Cinnamon stick
  • 1 strip Orange zest
  • 1 teaspoon Vanilla extract
  • 1 cup Granulated sugar
  • 0.5 cup Raisins (optional)
  • 0.5 teaspoon Ground cinnamon

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized pot, combine the rinsed rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 10 minutes or until the water is absorbed.

Step 3

Stir in the whole milk, low sodium almond milk, cinnamon stick, and orange zest strip. Increase the heat to medium and bring the mixture to a gentle simmer, stirring frequently to prevent the rice from sticking to the bottom of the pot.

Step 4

Lower the heat and let the mixture simmer gently (do not boil) for about 20 minutes, stirring occasionally.

Step 5

Remove the cinnamon stick and orange zest strip. Stir in the vanilla extract and granulated sugar. If using raisins, add them now.

Step 6

Continue to cook on low heat for another 10 minutes until the mixture is thick and creamy, stirring frequently.

Once achieved desired consistency, remove from heat. The arroz con leche will thicken as it cools.
