Ingredients

  • 150 grams Dried apricots
  • 250 ml Boiling water
  • 100 grams Unsalted butter
  • 150 grams Granulated sugar
  • 2 large Eggs
  • 200 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 120 ml Milk

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.

Step 2

Chop the dried apricots into small pieces. Place them in a bowl and pour the boiling water over them. Let them soak for about 15 minutes to soften.

Step 3

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
