Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 cup Unsweetened applesauce
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 medium Granny Smith apples, peeled and diced
  • 0.25 cup Vegetable oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and ground cinnamon. Set aside.

Step 3

In a large mixing bowl, combine the granulated sugar, brown sugar, applesauce, and vegetable oil. Stir until well blended.

Step 4

Add the eggs to the sugar mixture, one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Fold in the diced apples gently with a spatula until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared loaf pan and smooth the top with the spatula.

Step 8

Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 9

Remove from the oven and let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
