Ingredients

  • 1 cup raw rice
  • 0.25 cup urad dal (split black gram)
  • 0.5 cup poha (flattened rice)
  • 0.5 teaspoon fenugreek seeds
  • 1.5 cups water
  • 0.25 teaspoon baking soda
  • 1 teaspoon grated ginger
  • 1 piece finely chopped green chili
  • 2 tablespoons finely chopped coriander leaves
  • 2 tablespoons oil

Directions

Step 1

Rinse the raw rice and urad dal separately in water several times until the water runs clear. Soak the rice and urad dal separately for 4 to 6 hours.

Step 2

Rinse the poha under running water for a couple of minutes until it softens. Set aside.

Step 3

Drain the soaked rice and dal. Add the rice, dal, softened poha, and fenugreek seeds into a blender. Add water gradually to the mixture and blend to a smooth consistency.

Step 4

Pour the batter into a large bowl, cover it with a lid, and allow it to ferment overnight or for 8 hours in a warm place.

Step 5

Once the batter is fermented, it will have a slightly sour aroma. Stir in the grated ginger, chopped green chili, chopped coriander leaves, and baking soda.

Step 6

Lightly grease each cavity of the appe pan with a few drops of oil and heat it over medium flame.

Step 7

Pour a tablespoon of batter into each cavity of the appe pan, filling them 3/4 full. Cover the pan with a lid and let the appes cook undisturbed for 3-4 minutes or until the edges are golden brown.

Step 8

Using a wooden skewer or spoon, carefully flip the appes to the other side, cover, and cook for another 2-3 minutes until they are cooked through and have a crispy surface.

Step 9

Remove the appes from the pan and repeat the process for the remaining batter, greasing the pan as needed.

Step 10

Serve the low sodium appes warm with coconut chutney or sambar.
