Ingredients

  • 250 g All-purpose flour
  • 150 g Unsalted butter, chilled
  • 4 tbsp Ice water
  • 2 medium Granny Smith apples
  • 1 tbsp Lemon juice
  • 60 g Granulated sugar
  • 1 tsp Ground cinnamon
  • 2 tsp Cornstarch
  • 1 large Egg, beaten
  • 1 tsp Water

Directions

Step 1

Start by preparing the dough. In a large bowl, combine the flour and chilled unsalted butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Step 2

Gradually add the ice water, one tablespoon at a time, and mix until the dough just comes together. Wrap the dough in plastic wrap and refrigerate for at least 15 minutes.

Step 3

While the dough is chilling, prepare the apple filling. Peel, core, and dice the Granny Smith apples into small cubes.

Step 4

In a medium bowl, combine the diced apples with lemon juice, granulated sugar, ground cinnamon, and cornstarch. Mix well to ensure the apples are evenly coated.

Step 5

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 6

On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut the dough into six 6x6 inch squares.

Step 7

Place a heaping tablespoon of the apple mixture into the center of each square.

Step 8

Fold the dough over the filling to create a triangle, and press the edges together to seal. Use a fork to crimp the edges.

Step 9

Place the apple pastries on the prepared baking sheet.

Step 10

In a small bowl, whisk together the beaten egg and water. Brush the tops of each pastry with the egg wash.

Step 11

Cut small slits on top of each pastry to allow steam to escape during baking.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and the apples are tender.

Step 13

Allow the Apfeltasche to cool slightly on a wire rack before serving. Enjoy warm or at room temperature.
