Ingredients

  • 100 grams Pancetta, diced
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Red chili flakes
  • 400 grams Canned whole tomatoes, unsalted
  • 0.25 teaspoon Black pepper, freshly ground
  • 6 Fresh basil leaves
  • 50 grams Pecorino Romano cheese, finely grated (optional)

Directions

Step 1

Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once the oil is hot, add 100 grams of diced pancetta.

Step 2

Cook the pancetta for about 5 minutes, stirring occasionally, until the fat renders and it becomes golden brown and slightly crispy.

Step 3

Add 1 medium finely chopped onion to the skillet and sauté for about 5 minutes, until the onion becomes translucent.

Step 4

Stir in 2 cloves of minced garlic and 0.5 teaspoon of red chili flakes. Cook for 1 more minute until the garlic is fragrant.

Step 5

Add 400 grams of canned whole unsalted tomatoes to the skillet. Break the tomatoes into smaller pieces using a wooden spoon.

Step 6

Season the sauce with 0.25 teaspoon of freshly ground black pepper.

Step 7

Simmer the sauce on low heat for about 25 minutes, stirring occasionally, until it thickens and the flavors meld together.

Tear 6 fresh basil leaves and add them to the sauce just before serving for a fresh burst of flavor.
