Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 can (14.5 ounces) no salt added diced tomatoes
  • 6 cups low sodium vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 3 ounces alphabet pasta
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.

Step 3

Stir in the minced garlic and diced red bell pepper. Cook for another 2 minutes.

Step 4

Add the no salt added diced tomatoes, low sodium vegetable broth, bay leaf, dried thyme, and dried oregano to the pot. Stir to combine.

Increase the heat and bring the soup to a boil.
