Ingredients

  • 500 grams potatoes
  • 2 tablespoons mustard oil
  • 1 medium onion
  • 1 teaspoon freshly grated ginger
  • 1 green chili
  • 2 tablespoons coriander leaves
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Peel and cube the potatoes. Rinse them under cold water to remove excess starch.

Step 2

Boil the potato cubes in a large pot with water over medium heat until they are fork-tender, about 15-20 minutes.

Step 3

While the potatoes are boiling, finely chop the onion, green chili, and coriander leaves.

Step 4

Once the potatoes are cooked, drain them and let them cool slightly.

Step 5

In a mixing bowl, mash the boiled potatoes until smooth. You can leave a few chunks for texture if you prefer.

Step 6

Heat the mustard oil in a small pan over medium heat until it begins to smoke slightly and reduces the pungency.

Step 7

Add the chopped onion to the pan and sauté until it becomes translucent, about 3-4 minutes.

Step 8

Add the freshly grated ginger and chopped green chili to the pan and sauté for another 1-2 minutes until aromatic.

Step 9

Pour the sautéed onion mixture over the mashed potatoes.

Step 10

Add the turmeric powder, black pepper, and lemon juice to the mashed potatoes.

Step 11

Mix everything together thoroughly until the spices and onions are well incorporated with the mashed potatoes.

Step 12

Garnish with freshly chopped coriander leaves before serving.

Step 13

Serve this Low Sodium Aloo Bhorta warm or at room temperature as a side dish or with warm rice.
