Ingredients

  • 1 cup fresh cilantro
  • 0.5 cup fresh parsley
  • 2 pieces jalapeño pepper
  • 2 pieces garlic cloves
  • 0.5 cup Greek yogurt
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon dijon mustard

Directions

Step 1

Start by roughly chopping the fresh cilantro and parsley. Remove the stems as much as possible as they can add bitterness.

Step 2

Slice open the jalapeño peppers, remove seeds for less heat, and chop them into small pieces.

Step 3

Peel the garlic cloves and chop them into halves.

Step 4

In a food processor, combine the cilantro, parsley, jalapeños, and garlic. Pulse until all the ingredients are finely chopped.

Step 5

Add Greek yogurt, fresh lime juice, olive oil, red wine vinegar, ground cumin, ground black pepper, and Dijon mustard to the food processor.

Step 6

Blend all the ingredients on high speed until the sauce is smooth and creamy.

Step 7

Taste the sauce and adjust lime juice or pepper to preference.

Step 8

Transfer the Aji Verde sauce to a storage container. It can be served immediately or stored in the refrigerator for up to 5 days.
