Ingredients

  • 1 cup Almond flour
  • 0.5 cup Cocoa powder (unsweetened)
  • 0.75 cup Granulated erythritol
  • 0.5 cup Coconut oil (melted)
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsweetened almond milk
  • 0.5 cup Pecans (chopped)
  • 0.25 cup Dark chocolate (85% or higher, chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and set aside.

Step 2

In a medium mixing bowl, whisk together the almond flour, cocoa powder, granulated erythritol, baking powder, and salt until well combined.

Step 3

In another bowl, mix together the melted coconut oil, eggs, vanilla extract, and almond milk until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

Step 5

Fold in the chopped pecans and dark chocolate chunks, ensuring they are evenly distributed throughout the batter.

Step 6

Pour the brownie batter into the prepared pan and spread it evenly using a spatula.

Step 7

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (do not overbake).

Step 8

Remove from the oven and let the brownies cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely before cutting into squares.

Step 9

Slice into 12 equal pieces and serve. Store any leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to 1 week.
