Ingredients

  • 400 grams Black beans (canned, rinsed, and drained)
  • 50 grams Rolled oats
  • 30 grams Cocoa powder (unsweetened)
  • 60 grams Dark chocolate chips (70% cocoa or higher)
  • 80 milliliters Maple syrup
  • 30 milliliters Coconut oil (melted)
  • 2 large Eggs
  • 5 milliliters Vanilla extract
  • 5 grams Baking powder
  • 1 gram Salt

Directions

Step 1

Preheat your oven to 175°C (350°F) and line an 8x8-inch (20x20 cm) baking dish with parchment paper.

Step 2

Add the black beans, rolled oats, cocoa powder, maple syrup, coconut oil, eggs, vanilla extract, baking powder, and salt to a blender or food processor.

Step 3

Blend the ingredients until smooth, scraping down the sides as needed to ensure everything is well incorporated.

Step 4

Fold in half of the dark chocolate chips, reserving the other half for topping.

Step 5

Pour the batter into the prepared baking dish and spread it out evenly with a spatula.

Step 6

Sprinkle the remaining chocolate chips over the top of the batter.

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few crumbs are fine, but it shouldn’t be wet).
