Ingredients

  • 500 grams zucchini
  • 4 large eggs
  • 75 grams whole wheat flour
  • 100 grams reduced-fat cheddar cheese
  • 1 medium red bell pepper
  • 1 medium carrot
  • 2 stalks green onions (spring onions)
  • 1 clove garlic
  • 1 spray extra virgin olive oil spray
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a rectangular baking dish (approximately 20x30 cm / 8x12 inches) with baking paper.

Step 2

Use a box grater to grate the zucchini and carrot. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. Set aside.

Dice the red bell pepper and finely chop the green onions and garlic.

Step 4

In a large mixing bowl, whisk the eggs until frothy. Add the whole wheat flour, baking powder, salt, and black pepper, then whisk until smooth and well combined.
