Ingredients

  • 3 medium-sized Zucchini
  • 0.5 teaspoons Salt
  • 2 large Egg whites
  • 1 cups Low-fat mozzarella cheese (shredded)
  • 0.5 teaspoons Garlic powder
  • 1 teaspoons Italian seasoning
  • 0.5 cups Tomato sauce (low-sodium, no sugar added)
  • 0.75 cups Cherry tomatoes (sliced)
  • 0.5 cups Red bell pepper (thinly sliced)
  • 1 cups Spinach (fresh, chopped)
  • 0.25 cups Black olives (sliced)
  • 0.25 teaspoons Red pepper flakes (optional)
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray it with cooking spray.

Step 2

Grate the zucchinis using a box grater and place them in a clean kitchen towel or cheesecloth. Squeeze out as much excess water as possible to ensure a crisp crust.

Step 3

In a large mixing bowl, combine the grated zucchini, salt, egg whites, 1/4 cup of the shredded low-fat mozzarella, garlic powder, and Italian seasoning. Mix well until it forms a dough-like consistency.

Step 4

Spread the zucchini mixture onto the prepared baking sheet, forming an even, thin circle or rectangle to serve as the crust. Press down firmly to compact it.

Step 5

Bake the zucchini crust in the preheated oven for 12-15 minutes, or until it turns golden brown and slightly firm to the touch.

Step 6

Remove the crust from the oven and spread the tomato sauce evenly across the surface. Sprinkle the remaining 3/4 cup of low-fat mozzarella on top.

Step 7

Layer the cherry tomatoes, red bell pepper slices, spinach, and black olives evenly over the pizza. Sprinkle with red pepper flakes if desired.

Step 8

Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Allow the pizza to cool for a few minutes before slicing and serving.
