Ingredients

  • 6 cups kale
  • 1 large orange
  • 1 medium lemon
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 small, minced garlic clove
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 medium red bell pepper
  • 1 large carrot
  • 4 small radishes
  • 0.25 cup fresh parsley
  • 2 tablespoons sunflower seeds

Directions

Step 1

Wash and thoroughly dry the kale. Remove the thick stems and tear or chop the kale into bite-sized pieces. Place the kale into a large salad bowl.

Step 2

In a small bowl, zest and juice the orange and lemon. You should have about 1/4 cup of citrus juice combined. Whisk together the citrus juice, zest, olive oil, honey, Dijon mustard, minced garlic, salt, and black pepper to create the vinaigrette.
