Ingredients

  • 4 pieces Fresh green chilies (e.g., Anaheim or poblano)
  • 5 medium Tomatillos
  • 2 pieces Garlic cloves
  • 1 cup Fresh cilantro
  • 0.5 medium White onion
  • 2 tablespoons Fresh lime juice
  • 1 piece Jalapeño (optional for extra heat)
  • 0.5 teaspoon Salt
  • 2 tablespoons Water

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with foil or parchment paper.

Step 2

Place the green chilies, tomatillos (removed from their husks and rinsed), and garlic cloves on the prepared baking sheet.

Step 3

Roast the vegetables in the oven for about 10-15 minutes, turning once halfway through, until the chilies develop charred spots, the tomatillos soften, and the garlic becomes fragrant.

Step 4

Once roasted, let the vegetables cool slightly. Remove the stems from the chilies and jalapeño (if using). If you prefer milder salsa, remove the seeds from the chilies and jalapeño.

Step 5

In a blender or food processor, combine the roasted vegetables, fresh cilantro, chopped onion, lime juice, salt, and water. Blend until smooth, or to your desired consistency.

Step 6

Taste and adjust seasonings, adding more lime juice or salt if needed.

Step 7

Transfer the salsa to a serving bowl and let it cool completely in the refrigerator before serving. This allows the flavors to meld beautifully.

Step 8

Serve with tortilla chips, use as a taco topping, or enjoy with grilled vegetables and proteins. Store leftovers in an airtight container in the refrigerator for up to 5 days.
