Ingredients

  • 500 grams Low-fat Greek yogurt (2% fat or less)
  • 1 medium Cucumber
  • 2 cloves Fresh garlic cloves
  • 2 tablespoons Fresh dill
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by preparing the cucumber: Peel the cucumber and grate it using a box grater. Once grated, place the cucumber in a fine mesh sieve or cheesecloth and press to remove excess water. You can also squeeze it by hand if you don’t have a sieve.

Finely mince the garlic cloves or use a garlic press to ensure the pieces are very small and evenly distributed.

Chop the fresh dill finely and set aside.

In a medium mixing bowl, combine the low-fat Greek yogurt, grated cucumber, minced garlic, chopped dill, fresh lemon juice, and olive oil.
