In a large mixing bowl, combine the ground chicken, finely chopped water chestnuts, grated carrot, and scallions.
Add the soy sauce, oyster sauce, five-spice powder, sesame oil, egg white, and cornstarch to the meat mixture. Mix thoroughly until all ingredients are well incorporated and slightly sticky. Set aside for 10 minutes to allow the flavors to meld.
Prepare the dried bean curd sheets by wiping them gently with a damp cloth to remove excess salt and to soften them slightly.
Cut the bean curd sheets into squares (approximately 15cm x 15cm) to make them easier to handle.
Place about 2 tablespoons of the meat mixture onto the bottom third of a bean curd sheet square. Shape the filling into a small log, leaving some space at the edges. Roll the sheet tightly around the meat, folding in the sides to seal as you go. Repeat with the remaining filling and bean curd sheets.
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper. Lightly grease the parchment with cooking spray or a small amount of neutral oil.
Place the prepared meat rolls seam-side down on the baking tray. Lightly spray the tops of the rolls with cooking spray to help achieve a golden color while baking.
Bake in the preheated oven for 20-25 minutes, turning the rolls halfway through cooking, until the rolls are crisp and golden and the meat is fully cooked.
Remove from the oven and let the rolls cool for a few minutes before slicing them into smaller pieces for serving.
