Ingredients

  • 450 grams Lean beef strips (or chicken breast strips)
  • 2 teaspoons Olive oil
  • 1 medium Onion, finely sliced
  • 2 cloves Garlic, minced
  • 250 grams Mushrooms, sliced
  • 1 teaspoon Paprika
  • 1 tablespoon Dijon mustard
  • 1 cup Low-sodium beef (or chicken) stock
  • 1 cup Plain low-fat Greek yogurt
  • 2 teaspoons Cornstarch
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 4 cups Cooked whole wheat pasta (or rice)

Directions

Step 1

Heat the wok over medium-high heat and add 1 teaspoon of olive oil.

Step 2

Add the beef (or chicken) strips and stir-fry for 3–4 minutes until browned. Remove from the wok and set aside.

Step 3

In the same wok, add the remaining 1 teaspoon of olive oil, followed by the sliced onion. Stir-fry for 2 minutes until softened.

Step 4

Add the minced garlic and sliced mushrooms. Stir-fry for another 3–4 minutes until the mushrooms release their liquid and slightly caramelize.

Step 5

Stir in the paprika and Dijon mustard, mixing everything thoroughly.

Step 6

Return the cooked beef or chicken strips to the wok and pour in the low-sodium stock. Simmer for 5 minutes to blend the flavors.

Step 7

In a small bowl, mix the Greek yogurt and cornstarch until smooth. Gradually stir it into the wok to create a creamy sauce. Simmer for 2–3 minutes until the sauce thickens slightly.

Step 8

Season with salt and black pepper to taste.

Step 9

Top the stroganoff with fresh parsley and serve over cooked whole wheat pasta or rice.
