Ingredients

  • 200 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon (optional)
  • 50 grams Low-fat spread (or light butter)
  • 50 grams Granulated sugar
  • 50 grams Currants (or raisins)
  • 1 large Egg
  • 2 tablespoons Skimmed milk
  • 3 spritzes Oil spray (for cooking)

Directions

Step 1

In a large mixing bowl, sift together the all-purpose flour, baking powder, salt, and optional ground cinnamon.

Step 2

Cut the low-fat spread into small pieces and add it to the flour mixture. Use your fingertips to rub the spread into the flour until the mixture resembles breadcrumbs.

Step 3

Stir in the granulated sugar and currants (or raisins).

Step 4

In a small bowl, beat the egg and mix in the skimmed milk. Gradually add this mixture to the dry ingredients, stirring until the dough comes together. It should be firm but slightly sticky.

Step 5

Lightly flour a clean surface and roll the dough out to about 1 cm thickness.

Step 6

Use a round cutter (approximately 6 cm in diameter) to cut out Welsh cake shapes. Re-roll scraps as necessary to create more cakes.

Step 7

Heat a non-stick griddle or frying pan over medium heat and lightly spritz it with oil spray.

Step 8

Cook the Welsh cakes in batches, about 3-4 minutes on each side, until they are golden brown and cooked through.

Step 9

Allow them to cool slightly before serving. Enjoy warm or at room temperature, plain or with a light spread of jam for extra flavor.
