Ingredients

  • 3 medium Russet potatoes
  • 3 cups Fresh spinach
  • 3 cloves Garlic
  • 2 tablespoons Nutritional yeast
  • 2 tablespoons Fresh parsley
  • 0.5 cups Oat flour
  • 2 tablespoons Ground flaxseed
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 Olive oil spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Peel and chop the potatoes into chunks, then boil them in a pot of water until fork-tender (about 10-15 minutes). Drain and let them cool slightly.

Step 3

While the potatoes are cooking, heat a skillet over medium heat and add the spinach. Cook for 2-3 minutes, stirring frequently, until the spinach wilts. Remove from heat and squeeze out any excess water using a clean kitchen towel or paper towels.
