  • 0.5 cup Onion (diced)
  • 2 cloves Garlic cloves (minced)
  • 2 tablespoons Soy sauce (low sodium)
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 tablespoon Nutritional yeast
  • 1 tablespoon Ground flaxseed
  • 2 tablespoons Water
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Non-dairy milk (for brushing)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a small bowl, mix the ground flaxseed with water to create a flax egg. Let it sit for 5 minutes until it thickens.

In a food processor, combine the chickpeas, rolled oats, mushrooms, onion, garlic, soy sauce, smoked paprika, ground cumin, nutritional yeast, flax egg, and black pepper. Pulse until the ingredients come together into a thick, cohesive mixture. Avoid over-processing; the mixture should still have some texture.
