Ingredients

  • 500 ml Low-fat milk (1% or skim)
  • 120 ml Low-fat cream (also known as light cream)
  • 100 g Granulated sugar
  • 2 tsp Vanilla extract
  • 2 tbsp Cornstarch

Directions

Step 1

In a small bowl, whisk together 2 tablespoons of cornstarch with 50 ml of the low-fat milk until smooth. Set aside as the slurry will act as a thickening agent.

Step 2

In a medium saucepan over medium heat, combine the remaining 450 ml of low-fat milk, the low-fat cream, and granulated sugar. Stir continuously to dissolve the sugar.

Step 3

Once the mixture starts to steam (but is not boiling), add the cornstarch slurry. Stir constantly to prevent lumps from forming.

Step 4

Increase the heat slightly and continue stirring until the mixture thickens enough to coat the back of a spoon, about 3-5 minutes.

Remove the mixture from the heat and stir in the vanilla extract.

Pour the mixture into a shallow container and allow it to cool to room temperature, then cover and refrigerate for at least 2 hours or until completely chilled.
