Ingredients

  • 500 ml Non-fat milk
  • 200 ml Low-fat plain yogurt
  • 3 large Egg yolks
  • 1 Vanilla bean
  • 80 g Granulated sugar
  • 1 tbsp Cornstarch
  • 1 pinch Salt

Directions

Step 1

In a medium saucepan, pour the non-fat milk and add the seeds scraped from the vanilla bean along with the pod itself. Heat the milk over medium heat until it just starts to steam, but do not let it boil.

While the milk is heating, whisk the egg yolks, granulated sugar, cornstarch, and a pinch of salt in a separate bowl until the mixture is pale and slightly thickened.

Remove the vanilla pod from the milk and gradually pour about 1/4 of the hot milk into the egg mixture, whisking constantly to temper the eggs and prevent curdling.

Slowly pour the tempered egg mixture back into the saucepan with the remaining hot milk, whisking continuously.
